Zucchini Fritters

Ingredients:

  • Vegetable oil
  • 1/2 cup milk
  • 1 egg, lightly beaten
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 of 1-ounce package ranch-style dip mix
  • 2 cups (8 ounces) shredded zucchini

Directions:

  1. Fill a deep-fat fryer or skillet with oil to a 2-in. depth.
  2. Heat to 375°.
  3. Meanwhile, combine milk and egg in a bowl.
  4. Stir together dry ingredients and add to egg mixture; blend well.
  5. Fold in zucchini.
  6. Drop batter by rounded teaspoonfuls into hot oil.
  7. Fry until deep golden brown, turning once.
  8. Drain thoroughly on paper towels.

Air Fryer Instructions: On a parchment-lined tray, scoop your fritters out evenly spaced. Place in the freezer for 5-10 minutes. Preheat the air fryer to 370°. Place fritters on a single layer in your air fryer basket and lightly spray with oil. Cook for 5 minutes. Flip and respray with oil. Cook for an additional 5-10 minutes or until golden brown and crispy.
