Ingredients:
- 1 box pearled couscous mix, garlic and olive oil flavored
- 1 English cucumber, coarsely chopped
- 3 bell peppers: 1 red, 1 green, 1 yellow, coarsely chopped
- 1/2 large red onion, coarsely chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup flat-leaved parsley, finely chopped
- 2 cans chickpeas, drained
- 1 cup Feta cheese
- 1 lemon, cut into wedges
Salad Dressing Ingredients:
- 1/4 red wine vinegar
- 1/2 cup olive oil
- 1 Tbsp. lemon juice
- 1 tsp. minced garlic
- 1 tsp. dried oregano
- 1/2 tsp. dijon mustard
- To taste salt and pepper
Directions:
- Prepare couscous according to the package and cool.
- Mix chopped veggies in a bowl with the drained chickpeas and Feta. Add cooled couscous.
- Prepare dressing ingredients in a mason jar and seal the jar. Shake until combined. Add dressing if preparing a salad or when you’re ready to eat.
- Garnish with lemon wedge.
