Ingredients:
- 6 cups cubed watermelon (seedless preferred)
- 1 cup chopped jicama
- ¼ cup chopped red onion
- ¼ cup chopped fresh parsley
- 1 Tbsp. chopped fresh mint
- 5 Tbsp. fresh lime juice
- ½ cup crumbled feta cheese
- ¾ tsp. kosher salt
Directions:
- Combine watermelon and next 5 ingredients in a large bowl.
- Add cheese and toss gently.
- Sprinkle with salt and serve immediately.
