Ingredients:
- 1 large Avocado
- 2 cups red cherry tomatoes
- 2 cups yellow cherry tomatoes
- 1 English cucumber
- 1/4 cup fresh parsley, chopped
- 1/4 cup red onion, chopped
- 1 tsp. lemon juice
- salt and pepper, to taste
- 2 Tbsp. Olive oil
- 1 Tbsp. Red wine vinegar
- 4 oz. Feta cheese crumbles
Directions:
- Cut up all vegetables into bite-sized pieces and place in large mixing bowl. Add parsley and Feta cheese; combine. In a separate bowl, combine lemon juice, oil and vinegar; pour over salad. Add salt and pepper if desired. Combine well and serve. Refrigerate leftovers.
