Ingredients:

  • 1 cup ricotta cheese
  • 3/4 cup cream cheese
  • 1 Tbsp. dark rum
  • 1/4 cup sugar
  • 1-1/2 cups very strong espresso coffee, cooled
  • 16 Ladyfingers
  • 2 Tbsp. cocoa powder for dusting

Directions:

  1. Spray bottom of souffle dish with non-stick spray; set aside.
  2. Beat together cheeses, rum and sugar until light and creamy; set aside.
  3. Pour coffee into large shallow dish. Quickly dip one side of each Ladyfinger into the coffee and lay close together (dipped side down) in prepared souffle dish.
  4. Spread half the cheese mixture over Ladyfingers and dust with half the cocoa powder.
  5. Dip the rest of the Ladyfingers in the coffee and lay them dipped side down on top of the cocoa.
  6. Cover with the rest of the cheese mixture, and dust again with cocoa.
  7. Cover and refrigerate for at least 6 hours or overnight.
  8. Dust again with cocoa if needed before serving.

Optional: Using veggie peeler, shred a (refrigerated) dark chocolate bar for topping.
