Teriyaki Salmon Salad

Salad Ingredients:

  • 3 cups cucumber, chopped
  • 3 cups red bell peppers, chopped
  • ¾ cup red onions, chopped
  • 1/2 cup tomatoes, chopped
  • 1 medium avocado, chopped
  • 4 cups salad greens

Salmon Bites:

  • 1½ lbs. salmon fillet, skin removed
  • ½ cup teriyaki sauce
  • 1 Tbsp. sesame oil
  • 1 Tbsp. cornstarch
  • To taste salt and pepper

Sriracha Mayo:

  • ⅓ cup mayonnaise
  • 1 Tbsp. sriracha sauce
  • 1 tsp. lemon juice
  • salt to taste

Directions:

  1. Place salad ingredients in a large bowl and mix well. Cut the salmon into bite-sized cubes.
  2. In a mixing bowl, combine teriyaki sauce, olive or sesame oil, cornstarch, salt and pepper. Whisk until smooth.
  3. Add salmon cubes to the bowl and gently mix until they’re fully coated. Marinate for at least 20 minutes.
  4. Preheat air fryer to 400 F. Place salmon bites in a single layer in the air fryer basket, ensuring they aren’t touching. You may need to cook them in batches. Cook for 7 to 10 minutes, turning them halfway, or until the salmon is cooked through and has a slightly crispy exterior. If you’d rather, bites can be baked in the oven at 425 F for 12 to 15 minutes.
  5. In a small bowl, combine mayonnaise, sriracha sauce, lemon or lime juice and salt. Mix well.
  6. Arrange salmon bites on salad. Serve with mayo and dressing of choice, perhaps Lemon Vinaigrette. Email recipes@farmanddairy.com for dressing recipe.
