Ingredients:
- 1 lb. ground beef
- 1 small red onion, chopped
- 15 ¼ oz. can whole kernel corn, drained
- 10 6-inch corn tortillas, cut into 1-inch pieces
- 8 oz. bottle taco sauce
- 1 1/4 cups shredded cheddar cheese, divided
- Optional hot pepper sauce
- Toppings our cream, chopped green onion, chopped tomatoes, cilantro, salsa
Directions:
- In a large skillet, cook beef and onion over medium heat until meat is no longer pink and drain.
- Add corn, tortillas, taco sauce and 1 cup of cheese; heat through. Sprinkle with remaining cheese.
- Serve with hot pepper sauce, if desired. Serve with desired toppings.
