Ingredients:
- 1/2 pound ground beef or turkey
- 1/4 cup chopped onion
- 1/2 package taco seasoning
- 1/4 cup water 8 eggs 1
- 1/2 cup cheddar cheese
- Salsa
- Tortilla chips
- Shredded lettuce
Directions:
- Brown meat with chopped onion in a 10-inch skillet. Drain. Add taco seasoning and water; simmer for 2 minutes. Beat eggs and pour over meat mixture. Cover pan and turn heat to low. Cook 10-12 minutes until eggs are set. Sprinkle with cheese and cover skillet until cheese melts. Serve with salsa, lettuce and chips, as desired. Makes 4 servings.
