Summer Corn and White Bean Soup
Ingredients:
- 2 Tbsp. butter or canola oil
- 1 cup green onions, sliced
- 1 cup cooked ham, cubed
- 3 cups fresh white corn
- ½ tsp.salt
- ½ tsp. white pepper
- 1 tsp. garlic powder
- 2 15-oz. cans navy beans, rinsed and drained
- 2 14-oz. cans fat-free, less-sodium chicken broth
- 2 4.5-oz. cans chopped green chiles, undrained
- 1 cup heavy cream
Directions:
- Heat butter or oil in a Dutch oven over medium heat.
- Add onions and ham, and cook 4 minutes, stirring frequently. Stir in corn and remaining ingredients.
- Bring to a simmer, reduce heat and continue cooking for 5 to 10 minutes or until thoroughly heated.
