This recipe was inspired by the movie, Gone with the Wind.
Ingredients:
- 4 lbs, 10 cups fresh peaches, peeled and cut into 1-1.5 inch pieces
- 1/4 cup packed light brown sugar
- 1 Tbsp. cornstarch
- 1 Tbsp. lemon juice
- 1 tsp. vanilla extract
- 1/2 tsp. ground cinnamon
- 1/8 tsp. ground nutmeg
- 1/8 tsp. ground ginger
- 1/8 tsp. salt
Topping:
- 2 cups flour
- 1/2 cup sugar
- 1 and 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup butter, cold and cubed
- 1/2 cup buttermilk, cold
- Egg wash: 1 large egg beaten with 1 Tbsp. buttermilk
- 2 Tbsp. granulated sugar mixed with 1/2 tsp. ground cinnamon
Directions:
- Preheat oven to 350 F. Lightly grease a 9-by-13-inch baking pan.
- Mix all of the filling ingredients together in a large bowl and then spread into the baking pan.
- Bake for 10 minutes. Remove from the oven and set aside as you prepare the topping.
- Whisk the flour, sugar, baking powder, baking soda and salt together in a large bowl.
- Using a pastry cutter or 2 forks, cut in the cold butter until the mixture looks crumbly. Pour in the buttermilk and gently mix until combined. Take handfuls of dough and gently roll out.
- Place dough all over the top of the warm peach filling. Brush the top of the dough with egg wash and then sprinkle with cinnamon-sugar mixture.
- Bake for 40 to 50 minutes or until the topping is golden brown and peach filling is bubbling around the edges.
- Remove cobbler from the oven and set the pan on a wire rack. Cool for 5 minutes before serving.
