Ingredients:
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1/4 tsp. salt
- 2 tsp. vanilla extract
- 2 Tbsp. cornstarch
- 2 cups all-purpose flour
- 1/2 cup finely chopped Pecans
- 1 1/2 cups powdered sugar, for coating
Directions:
- Preheat oven to 350°F.
- In a large bowl, beat butter on medium speed until creamy, about 20-30 seconds. Blend in 1/2 cup powdered sugar and salt. Mix in vanilla. Add cornstarch evenly over mixture, beat on low speed. Slowly add in flour and mix just until combined. Stir in Pecans. Chill dough for 45-60 minutes.
- Scoop dough out 1 Tablespoon at a time and roll into a ball. Place on ungreased baking sheets and bake in preheated oven for 13 – 15 minutes, until bottom edges are lightly golden. Do not underbake.
- Remove from oven and allow to cool 2-3 minutes on cookie sheet. While cookies are still warm, roll cookies in 1 1/2 cups powdered sugar. Transfer to a wire rack to cool, and then roll in powdered sugar once more, generously coating them. Store cookies in an airtight container.
