Ingredients:
- 3/4 pound bulk pork hot sausage
- One (16-ounce) can unsalted pinto beans, rinsed and drained
- One (14 1/2-ounce) can unsalted stewed tomatoes, un-drained
- 1 cup uncooked long grain rice
- 1 cup water
- 2/3 cup picante sauce or salsa
Directions:
- In a large skillet, crumble sausage.
- Cook until no longer pink; drain.
- Add the remaining ingredients.
- Bring to a boil.
- Reduce heat, cover and simmer for 20-25 minutes or until rice is tender.
