    Rice Salad

    Ingredients for Salad:

    • 3 cups rice, cooked
    • 1 tsp. lemon juice
    • 1 Granny Smith apple, chopped
    • 1 cup red seedless grapes
    • 2/3 cup golden raisins
    • 2 cups chopped celery
    • 1/2 cup chopped green onion

    Ingredients for Marinade:

    • 1/3 cup vegetable oil
    • 1½ tsp. white wine vinegar
    • 1½ tsp. coarse grain mustard
    • 1½ tsp.curry powder

    Ingredients for Sauce:

    • 1/4 cup mayonnaise
    • 1 tsp. honey
    • 1 tsp. coarse grain mustard
    • To taste salt and pepper

    Directions:

    1. Sprinkle chopped apple with lemon juice and combine with other salad ingredients. Combine marinade mixture and pour over salad. Stir and chill for several hours, mixing occasionally.
    2. Add sauce ingredients to the chilled rice mixture. Toss to coat. Serve and enjoy.
