Red, White and Blue Nachos
Red and White Pico Ingredients:
- 1 large tomato, diced
- ⅓ cup white onion, diced
- 3 garlic cloves, minced
- Salt and pepper to taste
White Nacho Sauce Ingredients:
1 Tbsp. butter
1 Tbsp. all purpose flour
½ cup vegetable broth or milk
1 Tbsp. liquid from a jar of jalapenos
Pinch cayenne pepper
1 cup Monterey Jack cheese, shredded
Nachos Ingredients:
6 oz. blue corn tortilla chips, about 6 cups
1 roasted red bell pepper, cut into stars or diced
Directions:
- Combine tomato, onion, garlic and salt and pepper in a medium bowl. Set aside.
- In a small skillet, melt butter and whisk in flour. When smooth, whisk in broth or milk, jalapeno pickling liquid and cayenne. Stir in shredded cheese until smooth and remove from heat.
- Cover one large platter or three small plates with tortilla chips.
- Sprinkle pico mixture over top. Drizzle with cheese and top with roasted red bell pepper stars.
- Serve with sour cream.
