Red, White and Blue Nachos

Red and White Pico Ingredients:

  • 1 large tomato, diced
  • ⅓ cup white onion, diced
  • 3 garlic cloves, minced
  • Salt and pepper to taste

White Nacho Sauce Ingredients:

  • 1 Tbsp. butter
  • 1 Tbsp. all purpose flour
  • ½ cup vegetable broth or milk
  • 1 Tbsp. liquid from a jar of jalapenos
  • Pinch cayenne pepper
  • 1 cup Monterey Jack cheese, shredded
  • Nachos Ingredients:

  • 6 oz. blue corn tortilla chips, about 6 cups
  • 1 roasted red bell pepper, cut into stars or diced
  • Directions:

    1. Combine tomato, onion, garlic and salt and pepper in a medium bowl. Set aside.
    2. In a small skillet, melt butter and whisk in flour. When smooth, whisk in broth or milk, jalapeno pickling liquid and cayenne. Stir in shredded cheese until smooth and remove from heat.
    3. Cover one large platter or three small plates with tortilla chips.
    4. Sprinkle pico mixture over top. Drizzle with cheese and top with roasted red bell pepper stars.
    5. Serve with sour cream.
