Ingredients:
- 2 eggs
- 1 cup brown sugar
- 1/2 cup oil
- 1/3 cup water
- 1 can pumpkin puree (15-oz.)
- 1 3/4 cups flour
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. nutmeg
- 1/2 tsp. cinnamon
- 1 tsp. pumpkin pie spice
- 1/2 cup chopped walnuts
Topping:
- 1 Tbsp. butter (not margarine)
- 1/4 cup brown sugar
- 3 Tbsp. milk
- 1/4 cup chopped walnuts
Directions:
- In a mixing bowl, beat eggs and add brown sugar, oil, water and pumpkin puree.
- In separate bowl, combine rest of bread ingredients (except nuts). Add egg mixture and walnuts, and combine until just blended. Do not over mix.
- Pour into greased and floured 8.5 x 4.5” loaf pan. Bake at 325° for 55-60 minutes.
- To make the topping: Combine butter, brown sugar and milk in a small saucepan. Boil mixture for just 2 minutes, stirring constantly. Drizzle top of loaf and sprinkle with chopped walnuts, pressing lightly into loaf.
- Cool completely; wrap in plastic wrap before serving.
