This tastes very much like pumpkin pie, only much faster and easier to make than pie.
Crust Ingredients:
- 1 cup all purpose flour
- 1/2 cup brown sugar
- 1/2 cup quick oats
- 1/2 cup butter, melted
Filling Ingredients:
- 1 cup sugar
- 1 cup brown sugar
- 5 Tbsp. flour
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 tsp. pumpkin pie spice
- 3 eggs, separated
- 3 cups milk, scalded
- 1 cup pumpkin
Directions:
- Combine crust ingredients and press into a 9-by-13-inch pan.
- Bake at 350 F for 10 minutes.
- Combine dry ingredients, add egg yolks and pumpkin. Mix well; add scalded milk and then stiffly beaten egg whites.
- Pour over crust and bake an additional 50 to 55 minutes.
- Serve with whipped topping if desired.
