Pumpkin Raisin Cake

Reader’s Recipe: D. Flinner of Canton, OH

Ingredients:

  • 2 cups flour
  • 2 cups sugar
  • 2 teaspoon pumpkin pie spice
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 eggs
  • 1 (15 oz.) can pumpkin
  • 3/4 cup vegetable oil
  • 2 cups bran cereal (not flakes)
  • 1 cup chopped pecans
  • 1 cup raisins
  • powdered sugar, optional

Directions:

  1. Preheat oven to 350 degrees.
  2. Grease a 10″ tube pan, set aside.
  3. In a bowl, combine the first 6 ingredients, set aside.
  4. In a large bowl, beat eggs, add pumpkin and oil, stir in cereal until moistened, Add dry ingredients and stir just until combined.
  5. Fold in pecans and raisins.
  6. Pour in greased pan, bake for 60-65 minutes or until the cake tests done.
  7. Cool in pan 10 minutes before removing to a wire rack to cool completely.
  8. Dust with powdered sugar before serving if desired.

Yield 12-16 servings.
