Reader’s Recipe: D. Flinner of Canton, OH
Ingredients:
- 1 (29 oz.) can pumpkin
- 1 (13 oz.) can evaporated milk
- 4 eggs
- 1 1/2 cup sugar
- 1 1/2 teaspoon pumpkin pie spice
- 1 yellow cake mix
- 1 cup melted butter
- 1 cup chopped walnuts or pecans
- 1/4 cup brown sugar
- whipped topping or ice cream
Directions:
- Beat first 5 ingredients together.
- Pour into 9″x13″x2″ pan.
- Sprinkle all of dry cake mix over pumpkin mixture.
- Pour melted butter over top evenly.
- Sprinkle brown sugar and nuts over top of cake.
- Bake at 350 degrees 1 hour or longer for a crispy topping.
- Serve warm or cold with whipped topping or ice cream.
