Ingredients for Cookies:
- 1-1/2 cup packed brown sugar
- 1/2 cup margarine, softened
- 1/2 cup shortening
- 1 cup pumpkin puree
- 1 egg
- 2-1/3 cups flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 2 cups chopped pecans
Ingredients for Frosting:
- 3 cups powdered sugar
- 1/4 cup margarine, softened
- 1/4 tsp. ground cinnamon
- 3-4 Tbsp. milk
Directions:
- Mix brown sugar, margarine and shortening in a large bowl. Stir in pumpkin and egg. Then stir in flour, baking powder, salt and cinnamon. Finally, stir in pecans.
- Drop by Tablespoonfuls on an ungreased cookie sheet 2 inches apart.
- Bake in a preheated 350° oven for 12-15 minutes. Remove from cookie sheet and cool completely.
- To make the frosting: Mix all frosting ingredients until smooth, starting with 2 Tablespoons of milk, adding more if necessary.
- To color the frosting orange, add drops of red and yellow food coloring.
- Frost the cookies and decorate with Candy Corn if desired.
