Reader Recipe: Gaye V. Ochs of Leeper, PA
Ingredients for Cake:
- 2 cups sugar
- 4 eggs
- 1 cup salad oil
- 2 cups pumpkin
- 2 cups all-purpose flour
- 2 tsp. cinnamon
- 2 tsp. baking soda
- 1/2 tsp. salt
Ingredients for Icing:
- 1 stick butter
- 1 1-lb. box powdered sugar
- 8 oz. softened cream cheese
- 2 tsp. vanilla
- 1 cup chopped nuts
Directions for Cake:
- With a mixer: combine sugar, eggs, oil, pumpkin, flour, cinnamon, soda and salt in a bowl.
- Turn into large 13″x9″ pan, greased and floured.
- Bake in 350 degree oven for 35-45 minutes.
Directions for Icing:
- Blend butter, powdered sugar, cream cheese and vanilla in a mixer and spread on top of cooled cake.
- Sprinkle nuts on top.
