Ingredients:
- 3½ cups fresh or canned pumpkin puree
- ¾ cup unsweetened apple juice/apple cider
- ⅔ cup pure maple syrup
- 1½ Tbsp. pumpkin pie spice
- ¼ tsp. salt
- 1½ tsp. lemon juice
- ½ tsp. pure vanilla extract
Directions:
- In a large, deep pot set over medium heat, combine the pumpkin purée, apple juice, maple syrup and spices.
- Bring to a low simmer and cook, stirring frequently, for 30 to 45 minutes or until thickened to your desired consistency.
- Stir in lemon juice and vanilla. Allow to cool a bit before transferring to an airtight container and storing in the refrigerator.
