Prosciutto Caprese Bruschetta

Ingredients:

  • 1 loaf French bread
  • 6 oz.prosciutto slices
  • 8 oz. mozzarella balls or fresh mozzarella log
  • 1 cup diced tomatoes
  • fresh basil
  • balsamic glaze

Basil Drizzle Ingredients:

  • ¼ cup extra virgin olive oil
  • ¼ tsp. garlic powder
  • 1 1/2 Tbsp. basil
  • ¼ tsp. salt or to taste

Directions:

  1. Prepare basil drizzle first. Place olive oil, basil, garlic powder and salt in the blender. Blend until smooth. Add drizzle to diced tomatoes. Set aside.
  2. Cut French bread into thin slices and place on a cookie sheet. Top each piece with about 1/3 slice of prosciutto, a teaspoon of diced tomato mixture and a half or two halves of mozzarella cheese. Broil until cheese is melted and bread is slightly toasted, 1 to 2 minutes.
  3. Remove from oven and finish with balsamic glaze. Top with a basil leaf. Serve warm.
