Prosciutto Caprese Bruschetta
Ingredients:
- 1 loaf French bread
- 6 oz.prosciutto slices
- 8 oz. mozzarella balls or fresh mozzarella log
- 1 cup diced tomatoes
- fresh basil
- balsamic glaze
Basil Drizzle Ingredients:
- ¼ cup extra virgin olive oil
- ¼ tsp. garlic powder
- 1 1/2 Tbsp. basil
- ¼ tsp. salt or to taste
Directions:
- Prepare basil drizzle first. Place olive oil, basil, garlic powder and salt in the blender. Blend until smooth. Add drizzle to diced tomatoes. Set aside.
- Cut French bread into thin slices and place on a cookie sheet. Top each piece with about 1/3 slice of prosciutto, a teaspoon of diced tomato mixture and a half or two halves of mozzarella cheese. Broil until cheese is melted and bread is slightly toasted, 1 to 2 minutes.
- Remove from oven and finish with balsamic glaze. Top with a basil leaf. Serve warm.
