Peanut Soba Noodles

Ingredients:

  • ½ lb. Soba noodles
  • 1 cup frozen shelled edamame
  • ½ cup smooth peanut butter
  • 3 Tbsp. rice vinegar
  • 1 Tbsp. Thai Garlic Chili Paste
  • 2 Tbsp soy sauce
  • 1 Tbsp. fresh grated ginger
  • 2 Tbsp. honey
  • 1 tsp. toasted sesame oil
  • 1/2 cup rotisserie chicken, cut into pieces
  • 1 cup snow peas, trimmed and thinly sliced
  • 2 green onions, sliced
  • ¼ cup chopped salted roasted peanuts
  • 1 tsp. toasted sesame seeds for garnish

Directions:

  1. Cook the Soba noodles according to package directions. During the last 5 minutes of cooking, add the edamame.
  2. Combine the peanut butter, rice vinegar, chili paste, soy sauce, ginger, honey, sesame oil and ½ cup water in a blender and process until smooth.
  3. Drain the cooked pasta and edamame then toss with the chicken, snow peas and green onions.
  4. Drizzle with the peanut sauce and toss to coat. Serve sprinkled with peanuts and sesame seeds.
