Peanut Butter Covered Chocolate Cookies

This recipe was inspired by the The Parent Trap movie.

Ingredients:

  • 24 Chocolate sandwich cookies
  • 1/2 cup peanut butter
  • 12 ounces white chocolate almond bark, chopped
  • 1 cup peanut butter chips
  • 1 cup peanut butter shelled candy, chopped

Directions:

  1. Line a baking sheet with waxed paper and set aside.
  2. Twist open a chocolate cookie and add a teaspoon of peanut butter in the center; press the two halves back together and place it on the lined baking sheet. Repeat with all of the cookies.
  3. In a microwave-safe bowl, stir together the white chocolate and the peanut butter chips. Microwave at 50% power for 45 seconds. Stir. If it’s not completely melted, microwave in 15 second intervals at 50% power until melted.
  4. Dip each cookie into the coating and return to the waxed paper-lined pan. Sprinkle with chopped peanut butter candies and let cool completely.
