Easy to prepare and delicious when sliced up and made into Rueben sandwiches.
Ingredients:
- 1 2-3 lb. corned beef roast, with seasoning packet
- 1/4 cup of mustard, stone ground, dijon or yellow
- Aluminum foil
- Non-stick cooking spray
Directions:
- Unwrap and rinse your corned beef roast, reserving the seasoning packet for later.
- Cover the entire corned beef roast in half of the mustard. Use a basting brush to make sure it is evenly covered.
- Place the corned beef in the center of two pieces of aluminum foil with the fat cap side facing up.
- Sprinkle the seasoning packet on the top of the fat cap.
- Wrap tightly in foil and place in your air fryer basket making sure that is placed fat cap side up.
- Cook at 370° for 60 minutes.
- At the 60 minute mark, open the foil and baste the corned beef with the remaining mustard.
- Wrap the foil around the roast again, and continue air frying for another 45-60 minutes depending on the size of your corned beef.
- Let stand for 15 minutes before slicing across the grain.
