Ingredients:
- 2 8.5 oz. boxes Jiffy corn muffin mix
- 16 oz. can cream style canned corn
- 2 lbs. ground beef
- 4 oz. can mushrooms, drained well
- 8 oz. jar taco sauce
- 1 lb. mozzarella cheese
- 1 small can black olives, chopped
Directions:
- Prepare corn muffin mix according to directions. Add canned corn.
- Line the bottom of a 9-by-13 dish with 1/2 of the corn mixture. Set aside.
- In a medium skillet, brown ground beef, drain. Add drained mushrooms, taco sauce and olives. Simmer for 15 minutes.
- Pour over first layer of corn muffin mixture. Top with mozzarella cheese. Then pour the other half of corn muffin mixture on top.
- Bake at 350 F for 50 minutes.
