Ingredients:
- 1 cup rolled oats
- 3/4 cup flour
- 1/4 cup flax meal
- 1/2 cup peanut butter (we used chunky)
- 1/2 cup pure maple syrup
- 2 ripe bananas
- 2 eggs
- 2 tablespoons shredded coconut
- 1 teaspoon baking powder
- 1/4 teaspoon cinnamon
- 1/8 teaspoon nutmeg
Directions:
- Preheat oven to 350°F.
- Line muffin pan with baking cup liners or lightly grease pan.
- Combine all ingredients in large mixing bowl.
- Fill muffin cups 2/3 full.
- Bake for 15-20 minutes.
