Loaded Grilled Potato Chips
Ingredients:
- 4 large russet potatoes, scrubbed
- 8 ounces bacon, chopped in pieces
- 2 Tbsp. butter
- 8 ounces cheddar cheese, shredded
- 1/2 cup minced fresh scallions
- 1/2 cup sour cream
- Kosher salt
- Freshly ground black pepper
Directions:
- Preheat your griddle to medium high heat.
- While it heats up, slice the potatoes into 1/4 inch slices.
- Cook bacon on the griddle and remove most of the grease.
- Add potatoes to the cooktop and spread evenly with a spatula. Cook the potato slices on the grill for 5 to 6 minutes per side. Season both sides with kosher salt and pepper. Add butter to griddle and coat potatoes.
- Turn the grill off, top each potato slice with cheese and bacon crumbles. Once melted, remove from the griddle.
- Serve with sour cream and scallions.
