Ingredients:
- 1 1/3 cups sugar
- 1/2 cup boiling water
- 1 Tbsp. butter
- 1/2 cup lemon juice
- 1/4 tsp. salt
- 1 Tbsp. cornstarch
- 1/2 cup pineapple juice
- 2 egg yolks, beaten
- grated rind of 1/2 a lemon
- 2/3 cup crushed pineapple
Ingredients for Meringue:
- 2 egg whites
- 1 tsp. vanilla
- 6 Tbsp. fruit sugar
Directions:
- Mix sugar and cornstarch; gradually add the water and pineapple juice which have been heated together. Stir constantly until mixture boils, cook for 5 minutes.
- Add egg yolks, salt, lemon juice and rind, butter and pineapple and cook until mixture thickens. Cool, turn into a baked pastry shell and cover with meringue.
- For the meringue: Beat egg whites until slightly foamed. Add vanilla and beat until stiff. Add fruit sugar, beating after each spoonful. Spread meringue over cooled pie and brown in moderate oven.
