Ingredients:
- 8 oz. sugar snap peas
- 1 lemon (zested and juiced (about 1/2 tsp zest and 2 tbsp juice)
- 1 Tbsp. margarine
- 1/8 tsp. salt
- 1/4 cup. chopped fresh mint or cilantro
Directions:
- In a medium saucepan, steam the peas, covered, for 5 minutes, or until just tender-crisp. Drain well.
- Transfer to a medium bowl. Gently stir the remaining ingredients into the peas while they are still warm.
