Italian Green Beans

Ingredients:

  • 4 slices bacon
  • 3 green onions, sliced
  • 2 tsp. minced garlic
  • 14.5 oz. can Italian-style diced tomatoes, undrained
  • ½ tsp. Italian seasoning
  • 2 bags frozen green beans, Italian cut
  • To taste salt and pepper

Directions:

  1. In a large, deep skillet, cook bacon over medium heat until crisp. Season with a bit of salt and pepper. Remove from the pan and drain on paper towels. Do not remove bacon grease from skillet.
  2. Turn the heat down to medium-low and add sliced green onions to the bacon grease. Cook for about a minute and then add minced garlic and cook for another 30 seconds.
  3. Next, stir in green beans and diced tomatoes. Season with Italian seasoning, salt and pepper. Cover and cook over medium heat for about 8 to 10 minutes until green beans are heated through.
  4. Crumble bacon over cooked green beans. Stir, then serve.
