Huevos Rancheros Egg Tostadas
Ingredients:
- 32 oz canned tomatoes
- 1/4 cup diced onions
- 2 cloves garlic
- 1 whole jalapeño
- 1 tsp. smoked paprika
- 1 tsp. cumin
- 1 1/2 tsp. chili powder
- 15 oz. can black beans
- 4 whole eggs
- 4 medium tostada shells
- 1/2 cup chopped cilantro
- 1/2 cup cotija cheese
- 1 whole serrano pepper sliced
Directions:
- In a pot, bring canned tomatoes, onion, garlic, jalapeño, smoked paprika, cumin, and chili powder to a boil; reduce to a simmer and stir occasionally, about 10 minutes.
- Heat up your black beans in a separate pot.
- Fry up your eggs, one at a time, in a small pan in 2 tablespoons of olive oil; cover with a lid until the egg is opaque.
- Top tostada shells with black beans, salsa, then fried egg. Top with more of the salsa, cotija cheese, cilantro and some serrano pepper to add some more spice.
