Ingredients:
- ¾ cup light olive oil
- 1 large egg
- 1 Tbsp. lemon juice
- 1 tsp. Dijon mustard
- ½ tsp. salt
- ¼ tsp. ground black pepper
Directions:
- Place oil, egg, lemon juice, Dijon mustard, salt and pepper in a large bowl. Use a hand-held immersion blender to blend mixture until fully emulsified, taking care not to overblend. Store in a tightly closed container; refrigerate until using.
