Ingredients:
- 1/2 cup Malibu rum
- 1 tsp. sugar
- 1 pineapple peeled, cored & cut into 1/2-inch slices
- 1 tsp. sugar
- 1 cup whipped cream
- 1/4 cup shredded coconut, toasted
Directions:
- Combine the rum and sugar in a dish and whisk together until combined. Arrange the pineapple slices along the bottom of a 9-by-13-inch baking dish and pour the rum mixture over the pineapple. Let it soak for 2-6 hours, flipping the pineapple half way through to allow the rum to soak into both sides.
- Remove the pineapple from the rum mixture. Preheat the grill to medium-high.
- Lightly sear the pineapple directly over the heat for about 10 minutes, using tongs to turn once halfway through.
- Remove from grill and top with whipped cream and shredded coconut.
