Grilled Honey Lime Shrimp

Ingredients:

  • 2 lbs. medium or large peeled, deveined raw shrimp
  • ¼ cup freshly-squeezed lime juice
  • ¼ cup rice vinegar
  • ¼ cup Dijon mustard
  • ½ cup honey
  • ¼ cup minced fresh chives
  • 2 tsp. minced fresh garlic
  • 2 tsp. salt
  • 1 tsp. pepper
  • ½ cup extra-virgin olive oil

Directions:

  1. To make the marinade, whisk together all ingredients except shrimp. Marinate shrimp in half of the dressing for 30 minutes. Thread shrimp on kabob skewers.
  2. Grill the shrimp over high heat for about 10 minutes, flipping halfway through. Adjust the cooking time based on the size of your shrimp. Use the remaining dressing to baste the shrimp while they cook.
