Grilled and Filled Donuts
Ingredients:
- 4 whole glazed donuts, day old
- 2 cups fresh blueberries, plus a few
- 1 cup fresh blackberries, plus a few
- 3/4 cup water
- 1 tsp lemon zest
- 1/4 cup honey
- 4 Scoops vanilla ice cream
- Whipped topping
Directions:
- In a skillet combine blueberries, black berries, lemon zest, honey and water and place on a grill at around 300 F. Let it cook for about 10 minutes.
- Cut donuts in half to make a sandwich.
- Let the berry mixture cook down for another 10 minutes until it’s reduced to a thicker consistency. Add a handful of fresh blueberries at this point and remove it from the heat.
- Grill your donuts for about 2 minutes on each side until the glaze melts and caramelizes. Do not grill any longer or they will get hard.
- Take bottom half of a donut and place a scoop of ice cream. Top ice cream with the berries placing the other half of the donut on top. Cover with some more berries and top with whipped cream.
