Grilled and Filled Donuts

Ingredients:

  • 4 whole glazed donuts, day old
  • 2 cups fresh blueberries, plus a few
  • 1 cup fresh blackberries, plus a few
  • 3/4 cup water
  • 1 tsp lemon zest
  • 1/4 cup honey
  • 4 Scoops vanilla ice cream
  • Whipped topping

Directions:

  1. In a skillet combine blueberries, black berries, lemon zest, honey and water and place on a grill at around 300 F. Let it cook for about 10 minutes.
  2. Cut donuts in half to make a sandwich.
  3. Let the berry mixture cook down for another 10 minutes until it’s reduced to a thicker consistency. Add a handful of fresh blueberries at this point and remove it from the heat.
  4. Grill your donuts for about 2 minutes on each side until the glaze melts and caramelizes. Do not grill any longer or they will get hard.
  5. Take bottom half of a donut and place a scoop of ice cream. Top ice cream with the berries placing the other half of the donut on top. Cover with some more berries and top with whipped cream.
