Reader’s Recipe : D. Flinner of Canton, OH
Ingredients for Cookie Base:
- 1 1/2 cup flour
- 3/4 cup chopped dry roasted peanuts
- 1/2 cup brown sugar
- 1/2 cup margarine, melted
Ingredients for Topping:
- 2 cups semi-sweet chocolate morsels
- 3/4 cup creamy or crunchy peanut butter
- 1/3 cup powdered sugar
Directions for Cookie Base:
- Combine flour, peanuts, brown sugar and margarine in a bowl.
- Press onto bottom of a 13″ x 9″ baking pan.
- Bake in a preheated 350 degree oven for 10 – 12 minutes, or until light brown around edges.
Directions for Topping:
- Melt chocolate chips and peanut butter in a medium microwave safe bowl for 1 minute on high; stir.
- Cook on high additional 10-20 second intervals, stirring until smooth.
- Add powdered sugar, stirring vigorously until smooth.
- Spread over hot cookie base.
- Chill just until chocolate is no longer shiny.
- Serve at room temperature. Makes 36 bars.
