Granola Ingredients:
- 2 1/2 cups quick oats
- 1/2 pkg. (4 1/2) graham crackers, crushed
- 1/4 cup sweetened coconut flakes
- 1/3 cup brown sugar
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 cup butter, melted
Filling Ingredients:
- 8 oz. cream cheese, softened
- 1/2 cup powdered sugar
- 8 oz. whipped topping, thawed
- 2 lbs. Yoplait smooth-style strawberry yogurt
- 1 box, 3.4 oz, instant white chocolate pudding mix
- 1 cup cold milk
- Assorted Berries
Directions:
- Preheat oven to 300 F. Mix together and spread granola onto a rimmed baking sheet. Toast for 1 hour, stirring every 15 minutes until golden brown. Cool, and then store in an airtight container.
- Whisk together pudding mix and milk, let set.
- In a 3 quart mixing bowl, beat cream cheese and powdered sugar until smooth. Add whipped topping, yogurt and pudding. Mix well.
- To assemble parfaits, layer desired amount of granola in the bottom of a cup or parfait glass, add a generous amount of filling and top with assorted fresh berries. This can also be layered as a dessert in a 9×13 inch pan or a clear, shallow serving bowl.
- For best quality, serve within 2-4 hours. Serves 15.
NOTE: For a variation, try a different flavor of yogurt such as vanilla or peach, and then top with coordinating fruits such as fresh peaches. Enjoy for a summer brunch or snack!
