Fried Apples

Ingredients:

  • 3 large granny smith apples, peeled, cored and sliced
  • Juice of 1/2 lemon
  • 1/4 cup brown sugar, packed
  • 2 tablespoons granulated sugar
  • 1 tablespoon ground cinnamon
  • 1/2 cup (1 stick) unsalted butter, cubed
  • Pinch of salt

Directions:

  1. Place apple slices in 10-inch skillet (cast iron preferred). Squeeze lemon juice over apples and toss to coat. In small bowl, mix together brown sugar, granulated sugar and cinnamon; sprinkle mixture evenly over apple slices. Dot top of apples with cubed butter.
  2. Place skillet over medium heat if using cast iron, or over medium-high heat if using standard skillet. Allow apples to cook 3-4 minutes before stirring. When butter starts to melt, stir apples with wooden spoon. When butter and cinnamon mixture are well incorporated and syrup coats apples, allow them to simmer until slices are semi-soft, about 5-10 minutes depending on pan. (Reduce heat if syrup starts to stick to pan.) Remove pan from heat and sprinkle with pinch of salt; stir well and serve warm.
  3. Serve this southern dish as a pancake topping for breakfast or as a side dish with your favorite pork entree for supper. Firm Granny Smith apples hold up well to frying and have a tart bite making them an excellent choice for this fried apples recipe.
