Ingredients:
- 1 cucumber, peeled and chopped
- 1 cup cherry tomatoes
- 2 scallions, chopped
- 1 Tbsp. olive oil
- 1/3 green bell pepper, chopped
- 1/4 avocado, chopped
- 1/4 cup olives, pitted and chopped
- 1/4 cup feta cheese
- 1 Tbsp. Greek Seasoning
Directions:
- Put all ingredients into a bowl and mix for a great side salad. Can be doubled and just add the dressing each day. Or, add some greens like romaine, arugula or spinach to make it a more hardy dinner salad.
