English Muffin Snack Pizzas

Ingredients:

  • 4 English muffins, split
  • 2 tsp. extra virgin olive oil
  • ¾ cup prepared pizza sauce tomato, pesto or alfredo
  • To taste salt and pepper
  • 1 cup shredded cheese of choice
  • ½ teaspoon Italian seasoning
  • Toppings mini pepperoni, cooked sausage, sautéed veggies, mushrooms
  • Individual Ingredient

Directions:

  1. Preheat oven or toaster oven to 400 F.
  2. Arrange English muffin halves cut side up onto a baking sheet. Lightly drizzle with olive oil. Place in the oven and toast until barely golden, about 4 minutes.
  3. Remove and spoon small amount of pizza sauce over each one, using the back of a spoon to spread it evenly. Caution, bread will be hot. Sprinkle with salt and pepper. Add any desired toppings and finish with cheese and Italian seasoning.
  4. Bake for 10 minutes, until the cheese is melted and muffins are browned on the edges.
