Dutch Beets

Ingredients:

  • 4 medium Dutch Beets
  • 2 Tbsp. butter
  • 1/2 small finely sliced onion
  • 2 Tbsp. flour
  • 2 Tbsp. cider vinegar
  • 2 Tbsp. sugar
  • 1/2 tsp. salt
  • 1/8 tsp. pepper

Directions:

  1. Start by boiling the beets until they are tender. This usually takes about 30 to 40 minutes, depending on the size of the beets.
  2. Once the beets are cooked, remove them from the water and let them cool slightly. Peel the skin off the beets and slice into thin slices.
  3. In a separate pan, sauté onions until soft and translucent. Sprinkle flour over onions, add the rest of the ingredients to the pan and cook for a few more minutes to combine the flavors. Bring to a boil; cook and stir until thickened, about 2 minutes.
  4. Stir in the beets; heat through.
