Ingredients:
- 2/3 cup shortening
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 3/4 tsp. ginger
- 1 1/4 cups sugar
- 1 egg
- 1/4 cup molasses
- 1 tsp. baking soda
- 1/4 cup water
- 2 1/4 cups sifted flour
- 1 1/2 cups raisins
- 1/2 cup chopped walnuts
Directions:
- Cream well the shortening, salt, cinnamon, ginger and sugar.
- Add egg and molasses, mixing very well after each addition.
- Add approximately 1/2 of the flour, then water and baking soda, then remaining flour, mixing well after each addition.
- Stir in raisins and walnuts.
- Spread batter in about 8×8-inch squares on two baking sheets sprayed with non-stick cooking spray. Bake at 375° for 30 minutes. When cool, cut in small squares.
Yield: Makes roughly 4-1/2 dozen cookie bars.
