Ingredients:
- 16 oz. crushed pineapple, drained (reserve juice)
- 1 small box lime jell-o
- 8 oz package cream cheese
- 1 cup boiling water
- 1/2 cup cold water
- 1 1/2 cup mini marshmallows
- 1/2 cup chopped walnuts
- 2 Tbsp. reserved pineapple juice
Directions:
- In a large bowl add boiling water to lime Jell-O, stirring constantly to dissolve, about 2 minutes. Add 1/2 cup cold water and pineapple juice. Blend in cream cheese. Chill until thickened, but not set, approximately 60-90 minutes.
- Fold in pineapple, marshmallows, and nuts. Pour into 1 qt. mold (or a small cake pan) and chill until firm, about 2 hours.
- Unmold onto serving platter, garnish with orange slices or cherries.
