Ingredients:
- 1 cup CORNMEAL
- 3/4 cup FLOUR
- 1 small ONION
- 1 can (14 3/4 ounces) LOW-SODIUM CREAM STYLE CORN
- 1/4 cup OIL
- 1/2 cup LOW-FAT MILK
- 1 EGG
Directions:
- Preheat oven to 400° F.
- Spray a 12-cup muffin pan or an 8×8-inch or 9×9-inch pan with nonstick cooking spray.
- In medium sized bowl, mix together cornmeal and flour.
- Add cream style corn, milk, onion and eggs.
- Pour into the flour mixture; stir just enough to blend.
- Place in pan and bake for 15-20 minutes or until a toothpick or fork inserted in the bread comes out clean.
