Cream of Mushroom Soup

Ingredients:

  • 5 Tbsp. butter
  • 1 lb. assorted fresh mushrooms, sliced
  • 1/4 cup finely chopped onion
  • 3 cloves garlic, minced
  • 1 shallot, minced
  • 1/4 cup flour
  • 1/2 cup white wine
  • 3 cups chicken broth
  • 2 cups cream
  • 1 tsp. each salt and pepper
  • 2 tsp. chopped fresh thyme

Directions:

  1. Heat butter in a Dutch oven over medium-high heat.
  2. Add the mushrooms, onions and shallots and sauté for 10 minutes until soft. Add the garlic and sauté for 1 to 2 minutes. Add the flour and stir to coat everything. It will be very thick and dry.
  3. Add the wine slowly, letting the mixture loosen up. Add the broth slowly, stirring constantly.
  4. Add the cream and the salt, pepper and fresh thyme.
  5. Simmer over very low heat for 15 minutes.
