Ingredients:
- 5 Tbsp. butter
- 1 lb. assorted fresh mushrooms, sliced
- 1/4 cup finely chopped onion
- 3 cloves garlic, minced
- 1 shallot, minced
- 1/4 cup flour
- 1/2 cup white wine
- 3 cups chicken broth
- 2 cups cream
- 1 tsp. each salt and pepper
- 2 tsp. chopped fresh thyme
Directions:
- Heat butter in a Dutch oven over medium-high heat.
- Add the mushrooms, onions and shallots and sauté for 10 minutes until soft. Add the garlic and sauté for 1 to 2 minutes. Add the flour and stir to coat everything. It will be very thick and dry.
- Add the wine slowly, letting the mixture loosen up. Add the broth slowly, stirring constantly.
- Add the cream and the salt, pepper and fresh thyme.
- Simmer over very low heat for 15 minutes.
