Cornish Hen in Fig Preserves

Ingredients:

  • 1 Cornish game hen
  • Salt
  • Freshly ground black pepper
  • 2 sprigs fresh rosemary or thyme
  • 1/4 cup fig preserves

Directions:

  1. Coat the inside of a 3 1/2-quart slow cooker with cooking spray, if desired.
  2. Sprinkle the hen liberally with salt and pepper.
  3. Insert herbs into cavity.
  4. Transfer hen to the slow cooker and place on roasting rack.
  5. Pour the preserves or jam over hen.
  6. Cover and cook on High for 5 hours.
  7. Taste, and season again with salt and pepper.
  8. Serve sauce over hen.
