Cookout Potatoes

Ingredients:

  • 2 9-by-9-by-2-inch foil pans
  • 1 medium onion, halved and thinly sliced
  • 1 1/2 pounds Yukon Gold potatoes, very thinly sliced
  • 1 1/3 cup sharp cheddar cheese
  • 1/2 cup real bacon bits
  • 1/3 cup chopped bell pepper
  • 2 Tbsp. butter, melted

Directions:

  1. Gather the ingredients. Spray a 9-by-9-by-2-inch foil pan with nonstick cooking spray. Place the first pan in a second foil pan for insulation.
  2. Place half the onions, potatoes, cheese, bacon bits and bell pepper in the top pan. Repeat layers. Top potatoes with melted butter.
  3. Cover tightly with foil and grill over medium heat for 1 hour, rotating the pan occasionally to avoid burning. Check potatoes and cook for additional time if needed.
