Cider-Honey Bread
Yield: Makes 1 loaf

Ingredients:

  • 1 cup whole-wheat flour
  • 1 cup all-purpose flour
  • 1/2 tsp. cinnamon
  • 1/2 tsp. allspice
  • 1/2 tsp. nutmeg
  • 1/4 tsp. ground ginger
  • 1/4 tsp. salt
  • 1/4 cup light brown sugar, packed
  • 1/2 cup golden raisins
  • 1/2 cup butter, melted
  • 2/3 cup honey
  • 1 tsp. baking soda
  • 1/2 cup apple cider
  • 1 egg, well beaten

Directions:

  1. Combine flours, spices and salt in a large bowl; mix well. Add brown sugar and raisins. Make a well in the center.
  2. Combine melted butter and honey in a cup; pour into well in flour mixture.
  3. Dissolve baking soda in cider; quickly add to flour mixture along with egg. Beat until all ingredients are well mixed.
  4. Turn batter into a greased and floured 9″x4″ loaf pan.
  5. Bake at 325˚F for 50 to 60 minutes, until done in the center. Let cool; turn out of pan.
