Yield: Makes 1 loaf
Ingredients:
- 1 cup whole-wheat flour
- 1 cup all-purpose flour
- 1/2 tsp. cinnamon
- 1/2 tsp. allspice
- 1/2 tsp. nutmeg
- 1/4 tsp. ground ginger
- 1/4 tsp. salt
- 1/4 cup light brown sugar, packed
- 1/2 cup golden raisins
- 1/2 cup butter, melted
- 2/3 cup honey
- 1 tsp. baking soda
- 1/2 cup apple cider
- 1 egg, well beaten
Directions:
- Combine flours, spices and salt in a large bowl; mix well. Add brown sugar and raisins. Make a well in the center.
- Combine melted butter and honey in a cup; pour into well in flour mixture.
- Dissolve baking soda in cider; quickly add to flour mixture along with egg. Beat until all ingredients are well mixed.
- Turn batter into a greased and floured 9″x4″ loaf pan.
- Bake at 325˚F for 50 to 60 minutes, until done in the center. Let cool; turn out of pan.
