Chow Mein Casserole

Ingredients:

  • 1 1/2 lbs. ground beef
  • 1/2 cup chopped onion
  • 1 10.5oz. can Cream of Mushroom soup
  • 1 10.5oz. can Cream of Chicken soup
  • 3 cups water
  • 3 Tbsp. soy sauce
  • 1 cup chopped celery
  • 1/2 cup peas
  • 1/2 cup uncooked rice
  • 4-6 cups chow mein noodles (or amount more or less as desired)

Directions:

  1. Cook noodles and set aside. Brown the beef and onion until no longer pink. Add all other ingredients except the chow mien noodles. Put into a greased 3 qt. casserole dish, or other baking dish. Bake covered for 1 hour. Remove cover, top with chow mein noodles and bake uncovered for an additional 1/2 hour. Yield: Approximately 2 qts.
